Where did the summer weather go?! It's a dreary day here in London Town so I'm cooking the ultimate comfort food.... a Fabulous Fish Pie! #LockdownLunch
You can use any combination of fish you like so be creative, pre-heat your oven to 180/c (fan assisted) and let's go!
Ingredients you will need to serve 6-8:
Olive oil
Salt and pepper
1.5kg potatoes (I used large red potatoes)
1 large onion
1 medium sized leek
2 medium sized carrots
25g butter
2 tbsp. plain flour
add a bay leaf and some dried/fresh parsley (I ran out!!) :(((
750g fish: I used a combination of Smoked Haddock loin, King Prawns and a basic Fish Pie mix
Splash of double cream for the mash (optional)
Approx 250g extra mature/vintage cheddar cheese
Serve with ample GREENS!!
