How to convert an Image to Vector in illustrator with Image Trace

My recording setup:
Lighting: Woods Clamp lighting (I use 2 of these)
Camera: Canon T5 - This is what I use, but it's probably a better deal to get the newer model: Canon T6 -
Microphone: Boya lapel mic (when I talk to the camera) -
and Blue Snowball mic (on screen capture videos) -
Recording software: Quicktime
Editing software: Adobe Premiere Pro and Adobe After Effects
